A Corby family bakery that opened its first shop in Rockingham Road last year is looking to expand its seating capacity to keep up with demand.

Butterwick owners, husband and wife team Ryan and Fiona Scarborough, have applied for planning permission for an al fresco seating area in the front of their shop.

Since September, the couple have seen their artisan, home-baked goodies fly off the shelves with their current premises choc-a-bloc with customers demanding cakes from their high-end range.

Ryan and wife Fiona, 26, launched a new 2020 range combining flavours and cakes to produce their own twist on sweet treat classics.

Baker Ryan, 29, said: "It's been going fantastically well. January in particular has gone mad.

"Our best seller by a mile is the Nutella Kinder cookie sandwich - two cookies sandwiched together with frosting with crushed up Kinder chocolate chunks.

"Our 'billionaires cornflake' cake is amazingly popular. It is a cookie base with cornflake cake on the top.

"We also have a 'rocky cookie' which is rocky road on a cookie."

As well as providing a base for their celebration cake business, the pair bake from scratch a range of unusual fusion cupcakes and sweet treats.

They employ two members of staff and offer work placements to students from Tresham College.

Customers have been travelling from as far afield as Grantham and Leicester to taste the Butterwick bakes.

At peak times the cafe tables are unable to accommodate all the customers.

Their plans are for a retractable awning on the shop and for removable barriers forming a seating area immediately outside the front to contain four tables and ten chairs.

Ryan added: "The additional seating would help us because on certain days we fill up. If it gets approved, the outdoor area will be ready for ready for the summer

"We like this building and we want to keep it. We would like to open another shop but we don't want to run before we can walk."
