A Rushden Lakes restaurant will soon be offering three new dishes which have been designed to prove that 'vegetarian doesn't mean boring.'

Bill’s Restaurant & Bar has a new partnership with best-selling cookery writer and nutritional therapist Madeleine Shaw.

Born out of a shared passion for produce, delicious ingredients and seasonal recipes, Madeleine has created a bespoke menu of three vegetarian dishes, exclusive to Bill’s.

Bill’s will launch its new and dedicated menu on World Vegetarian Day, which is on Thursday (October 1) with all three dishes available for six weeks only.

Branches offering the new dishes will include Bill's on the boardwalk at Rushden Lakes.

Brunch-goers will be able to enjoy Madeleine’s pea pancakes with smashed avocado and herby poached eggs, watercress and a zingy lemon drizzle (£9.95), available daily from 8am.

For those looking for a lighter lunch or dinner option, Madeleine has created a miso roast sweet potato and ancient grain salad with baby kale, roasted pistachios, cranberries and a lemon dressing (£12.50), and for something a little more warming as the colder weather sets in, a creamy spinach dahl with spiced roast chickpeas, greens and a side of coconut rice (£12.50).

Now an established voice on the UK wellness scene, Madeleine posts content across her channels, helping her followers to 'get the glow' by taking a balanced and holistic approach to their health.

Her recipes, combined with her nutritional knowledge and health tips, have meant she has become a go-to resource for hundreds of thousands of fans in the UK and beyond.
