INGREDIENTS (serves 2)

2 red peppers

4 tortilla flour wraps

2 rounds of goat cheese

Rocket salad

Farrington’s Mellow Yellow rapeseed oil

Farrington’s Mellow Yellow Balsamic Vinegar Dressing

Farrington’s Mellow Yellow mayonnaise


Firstly, wash the peppers and salad and pat dry.

Cut the peppers evenly into strips, place on a roasting tin and give a generous covering of the Balsamic Vinegar dressing.

Bake in the oven for 30 to 40 minutes, checking in between and turning.

Take half a round of goats cheese per wrap and break into chunks.

On a wrap, spreak some mayonnaise and place the lettuce, goat cheese and roast peppers on top.

Fold and wrap, tuck the ends in and cut diagonally before serving. Enjoy!
