Celebrate summer with this Wimbledon inspired delight!

You really will delight your party guests, family and friends with this beautiful and truly British recipe.

Full of all the great ingredients of a British summer garden party, it is fresh and light with a little kick of Pimms!

At this time of year, fresh British strawberries are in abundance and make a wonderful crown on this summer cake.

The hints of lemon, Pimms and mint make this a worthy centre piece to an afternoon tea, a garden party or even a picnic on Henman Hill!

INGREDIENTS

Cake

200ml Mellow Yellow cold pressed rapeseed oil

200g caster sugar

4 eggs

Zest of 1 lemon

Few fresh mint leaves finely chopped

200g self-raising flour

1 tsp baking powder

50ml Pimms

Glaze

100g icing sugar

1 tbls Pimms

Enough lemon juice to achieve the desired consistency.

Punnet of strawberries

METHOD

Beat together Mellow Yellow cold pressed rapeseed oil, sugar eggs and lemon zest until creamy. 

Gently stir in flour baking powder, Pimms and mint until combined.

Pour into lightly oiled ring or bundt tin.

Bake at 180°C for 50mins

Remove from tin to cool on rack.

Pour glaze over and fill with fresh strawberries.
