Corby mayor Anthony Dady tucks into smoked salmon pasta with mixed vegetables, a meal which cost 59p, on his £1-a-day diet to raise awareness of the financial difficulties faced by Corby food bank users.

He will donate the money he saves to his chosen charities and he is inviting people to join him on his four-week challenge.

They can also sponsor him for £1 a day or donate £17 to the food bank, which will pay for a parcel of food for one person.

The mayor’s menu ideas can be found on anthonydady.com/eatforonepound.html and donations can be made at anthonydady.com/donate.html.

He said: “Having been unemployed myself, I know how it feels to have to live in severe, financial difficulty.”
